Beef Kofta Kebabs with Smoked Garlic Mayonnaise
A recipe especially put together for National Barbecue Week. Quick and simple to make, these Koftas are a great addition to any barbecue spread.
Makes 10 skewers
500g British beef mince
1 large handful of fresh parsley, chopped
2 tsp ground coriander
2 tsp ground cumin
½ tsp ground chilli
1 tbsp Smoked Garlic Mayonnaise
A good twist of salt and pepper
Lime wedges to serve
Mix the mince in a bowl with half the chopped parsley, mayonnaise, ground coriander, cumin and chilli. Season generously. Once combined, roll into 10 sausage shapes, moulding onto wooden skewers, cover and chill in the fridge.
Cook on the barbecue, or fry in a little oil on the hob. Turn regularly until cooked through.
Serve garnished with the remaining parsley, lime wedges and Smoked Garlic Mayonnaise to dip.
