Jerk Chicken & Pineapple Barbecue Skewers

These barbecue skewers are a dream to make, taking no time at all. Prep ahead using our Jerk Marinade and let it work its magic for at least an hour before cooking, for the best of flavours.

INGREDIENTS

Makes 8 skewers

Charlie & Ivy's Jerk Marinade

Fresh pineapple, sliced into large chunks

3 chicken breasts, cut into chunks

Handful of fresh coriander leaves, for serving

Lime wedges, for serving

Charlie & Ivy's Mango & Chilli Dressing, for dipping

METHOD

Marinade the chicken and pineapple chunks in the Jerk Marinade for a couple of hours, before popping onto skewers. Barbecue until the chicken is cooked through and the pineapple is lightly charred.

Serve with a scattering of fresh coriander and wedges of lime, and a pot of Mango & Chilli Dressing, for dipping.
