Picnic Loaf with Beef & Horseradish
This picnic loaf makes for a tasty and filling lunch! Made from a hollowed out sourdough boule, this loaf is layered full of fresh ingredients.
Ideal for a picnic, simply wrap the sliced loaf in foil and store in your cool bag!
Serves 6
INGREDIENTS
400g sourdough boule
100g Horseradish Plant-Based Mayonnaise
110g beef (4-6 slices)
1 large heritage beef tomato
150g mozzarella, sliced
Handful of rocket
Slice the top off the loaf of bread to make a ‘lid’. Hollow out the remaining loaf, keeping the leftover bread to use for another recipe. (We recommend making breadcrumbs!)
Spread a thick layer of Horseradish Mayo around the inside of the bread ‘bowl’, before layering in the meat, cheese and salad. We did this in the following order: Half of the beef, Tomato Slices, Rocket, more Mayo, Mozzarella, then finish with the rest of the beef slices.
Spread the last of the mayo onto the underside of the bread ‘lid’, and place back onto the top of the loaf.
Wrap in foil and refrigerate for half an hour before slicing into 6-8 pieces.
