Method
Marinade the pork loin fillet for a minimum of an hour (we marinaded ours for 3 hours), before briefly sealing on the BBQ or in a griddle pan. Continue to cook on the BBQ (wrapped in foil), or in a roasting dish in a pre-heated oven (160C Fan / 180C / 350F / Gas Mark 4) until cooked and any juices run clear. This should take around 20 minutes in an oven.
Leave to rest for a short while and slice before slicing into medallions and serve with rosemary sprigs.
