Roasted Tomato & Feta Dipping Oil
This delicious dipping oil is the perfect simple starter for a summer dinner party, or just as a treaty lunch! Made with fresh and fragrant Isle of Wight Tomatoes this is a must-try for any tomato fan.

INGREDIENTS
200g Feta
500g Mixed tomatoes, we used Isle of Wight Tomatoes
Lemon, Garlic, Thyme & Balsamic Bread Dipper
1/2 Lemon, sliced
A few thyme sprigs
Salt & Pepper
1 Baguette
Preheat the oven to 180°C / 160°C Fan
Place the tomatoes into an oven-proof dish, slicing them in half if they are larger than a cherry tomato. Pour over a generous drizzle of the Lemon, Garlic, Thyme & Balsamic Bread Dipper, then a good pinch of Sea salt & black pepper. Add in the block of feta and lemon slices, before pouring over another good drizzle of lemon and garlic dipper. Add the thyme sprigs and bake in the pre-heated oven for around 20 minutes, or until the tomatoes are soft.
While the dipping oil is baking, diagonally slice the baguette, laying the slices out onto a baking sheet. Drizzle over some bread dipper and bake until crisp, around 5 minutes on each side.
Once everything is baked, mix up the dipping oil and serve warm with the toasted baguette.
