Spicy Roasted Chickpea Salad

Serves 4-6

Tin of chickpeas (400g), drained

Good drizzle of Charlie & Ivy’s Cold Pressed Rapeseed Oil

1 tsp turmeric

1 tsp garam masala

½ tsp cumin

¼ tsp chilli powder or flakes

1 cup of couscous

2 carrots, grated

Good glug of Charlie & Ivy’s Smoked Chilli Dressing Salt & pepper



Pre-heat the oven to 180oC. Put the drained chickpeas and spices in a roasting dish, drizzle over the rapeseed oil and season with salt and pepper. Roast in the oven for 20 minutes.

Whilst roasting make up the couscous according to the packet instructions.

Once the chickpeas are cooked, mix with the couscous, grated carrot and add a generous glug of the smoked chilli dressing, along with salt and pepper. Mix together, taste and serve.
